Ingredients:

  • 500g beef, cut into 5x5 cm cubes
  • 1 turmeric leaf (can be replaced with 2 bay leaves)
  • 15g tamarind
  • 750ml thick coconut milk (24% fat)
  • 2 stalks lemongrass
  • 4 kaffir lime leaves

Spices (Ground):

  • 120g shallots, coarsely chopped
  • 20g garlic, coarsely chopped
  • 125g large red chili, deseeded
  • 10g ginger
  • 30g galangal
  • 20g candlenuts

Cooking Instructions:

  1. Grind all spices. Add kaffir lime leaves, lemongrass, and tamarind.
  2. Add thick coconut milk. Sauté until the coconut oil separates and the color turns brownish.
  3. Add the beef, stir well.
  4. Preheat the oven to 120°C. Place all ingredients in an uncovered pot and put it in the oven.
  5. Slow-cook for 1.5 - 2 hours until the meat is tender.
  6. Transfer to a wok. Cook slowly over medium heat while stirring until the meat turns dark brown and tender.
