Made from sago (tapioca flour), sugar, and coconut milk, this cookie has a sweet and savory flavor that is not too heavy. Sometimes, ginger and sesame seeds are added for variation. It is usually served during celebrations such as Eid, community gatherings, or New Year. This snack is perfect to serve with a cup of tea, coffee, or milk.

Ingredients
The ingredients used are: sago/tapioca flour, thick coconut milk, granulated sugar, brown sugar, eggs, salt, and kaffir lime leaves.
To make Rintak cookie, the coconut milk is boiled with brown sugar, granulated sugar, and kaffir lime leaves until it boils and thickens. Once the coconut milk cools, whipped eggs and granulated sugar, which have been beaten until thick and white, are added. Then, a little sago flour is added and left overnight. After that, more sago flour is gradually added while stirring until the dough can be shaped. The dough is shaped using a flower-shaped ring cutter or as desired, then baked in the oven at 160°C for about 15 minutes until cooked and dry. Remove and let it cool. Rintak cookie is ready to serve once cooled.

Rintak cookie is a symbol of the local wisdom of the people of Bangka Belitung. Its simple preparation reflects the culture of the people, who value the process in producing something of quality. Additionally, the use of sago, coconut, and brown sugar as raw materials shows the natural wealth of the region.
